In this class, Lelia will educate us on the vegetarian lifestyle and how to make meatless meals that are delicious and nutritious. Wednesday, November 30th ● Sandra Gugliotta - Dining Elegance Caters ● "A True Italian Christmas Celebration" ● $45.00 ● 6:30 - 9:00 pm ● Demonstration Class Come and take a peek at Christmas Eve & Christmas Day in an Italian home and how they are celebrated with traditional dishes. Menu: Traditional Christmas Eve Foods ~ traditionally seven different seafood dishes are served on Christmas Eve in the Italian household. Two we will be making are: Insalata ~ Frutti di Mare (a rich dish loaded with shellfish, mussels, clams, scallops, shrimp & calamari tossed with garlic, freshly squeezed lemon juice, extra virgin olive oil & freshly chopped parsley) ● Bacala` alla Napoletana (most regions of Italy have their own very specific way of preparing cod & will hold to their tradition when preparing it for Christmas Eve dinner) Seasoned cod fish lightly dredged in seasoned flour then pan sauteed with extra virgin olive oil & stewed with capers, black olives, whole cut & peeled tomatoes, pine nuts & dried golden raisins * (this is an optional item that is used by some, not all) ● Christmas Day Feast ~ some type of baked pasta dish is generally typical of a traditional Italian feast on Christmas Day. Depending upon the region, the specific dish typical to that region is what is prepared. Cannelloni al Forno (a seasoned & cooked mix of beef, veal & chicken & wine, coarsely ground tossed with cheeses, nutmeg & eggs & stuffed inside homemade egg noodle pasta sheets & rolled topped with a traditional meat sauce & oven baked then served with a rich & creamy béchamel sauce) ● For a second course on Christmas day, depending upon the region a meat dish, generally prepared slowly cooked with wine or in the oven roasted is served. Rotollo di Vitello Arrosto (whole veal brisket, cut open & seasoned then layered with prosciutto, hard boiled eggs, sauteed spinach, sliced carrots & celery leaves & rolled into a large roast, pan seared then finished off in the oven with white wine, sliced & served with natural juices) ● Bitter Green Salad

 

Thursday, December 1st ● Hannah Decker - Pastry Chef ● "An Afternoon Tea" ● $45.00 ● 6:30 - 9:00 pm ● Demonstration Class Teas are a tradition that had lost their popularity until recently. Now tea parties have been revived and are a lovely way to spend time with friends. Hannah will show how to host a wonderful tea party. Menu: Learn to brew a proper pot of tea ● Assorted tea sandwiches - Cured Salmon & Dill, Cucumber Watercress, Caramelized Onion & Goat Cheese ● Gruyere Cheese & Herb Savory Scone ● Dried Cherry & Toasted Almond Scone ● White Chocolate Cranberry Biscotti ● Semi-Sweet Chocolate Dipped Almond Macaroons ● Traditional Quiche Lorraine (spinach, bacon & onion quiche)
