Holiday Classes
2 SEATS LEFT!  Thursday, November 29th ● 6:30 - 9:00 pm "Introduction to Sushi" ● Hands On Class ● Lelia Gentle - DreamCatcher Farm ● $65.00  In this class you will learn about how to make proper Sushi Rice, how to select sushi grade fish, as well as a discussion of necessary ingredients and equipment. We'll review all the different kinds of sushi including Maki Sushi (Hosomaki, Futomaki), Nigiri Sushi, Gunkan Sushi, Temaki Sushi, Oshi Sushi, Chirashi Sushi and Inari Sushi. Class will include hands on making of an Inside roll and an Outside roll. In class, you will sample our version of a Cucumber Roll, Salmon Skin Roll, Grilled Asparagus Roll, Ebi Nigeri, Spicy Squid Roll, Philadelphia Roll and a Dragon Roll with Eel. For dessert, we'll have Fresh Fruit Splashed with Midori

Do you wish you knew how to bake, assemble, decorate and preserve the charming gingerbread houses you see in the magazines and on TV?  Learn how as we go through the process, step by step, to create and decorate a masterpiece! Each student or family will make their own, large house to take home with them!  Don't miss out!  Class is priced per house; this would apply to an individual, couple or family of four or less.  For larger families, please call for special pricing. Class is limited to 12 houses.  

Monday, December 3rd ● 6:30 - 9:00 pm ● "Showstopping Desserts for the Holidays" ● Demonstration Class ● Debbie Richter - Desserts by Debbie ● $45.00   Many of you remember Debbie as the original owner of Sweet Surrender and all of her decadent creations.  Her new venture, Desserts by Debbie, is sure to offer the same, if not more.  Decadence during this season is the one time during the year that we seem to allow ourselves this luxery.  Enjoy every moment of it with these memorable desserts.  Menu:  Buche de Noel ~ a French Christmas cake also known as a yule log ● Croquembouche ~ French elegant dessert made with tiny profiteroles, coated with caramel and stacked into a tall pyramid shape ● "Run for the Roses" Cake ~ classic red velvet cake with cream cheese buttercream icing

Tuesday, December 4th ● 6:30 - 9:00 pm ● "The Modernist Cocktail Party" ● Demonstration Class ● Stephen Dennison - Majid's ● $50.00  The old fashioned cocktail party is back but with a 21st century twist. This will be a memorable occasion, so please join us!  Each cocktail has been specially created to pair with each small plate offering.  Menu: "The Earhart" ~ a Sazerac made with gin and kissed with jasmine oil  paired with "Hot Brown Rumaki" ~ turkey, roma tomato, hickory-smoked bacon and mornay sauce ● "The Sidecar" ~ the classic cocktail made with cognac paired with "Root Vegetable Napoleon" ~ carrot, daikon, potato, ginger, monterey jack ● "The Butternut Squash Nog" ~ Sailor Jerry spiced rum, butternut squash, brulleed sugar, egg paired with "Pastrami, Flank Steak, Colcannon Potato Cake with Gastrique A L'Orange" ● "The Scotched-Coffee Alexander" ~ famous grouse scotch and coffee ice cream paired with "Quail Egg Hard-cooked, Sausage, Cornmeal and Laphroig Honey Drizzle"

Wednesday, December 5th ● 6:30 - 9:00 pm ● "Old English Christmas Dinner" ● Demonstration Class ● Lelia Gentle - DreamCatcher Farm ● $55.00   The Yuletide season in the 18th century abounded with larger-than-life pageantry; there are records of 800 pound puddings and pies filled with all the fowl in the barnyard.  The 19th century brought the first Christmas cards and the tree itself, as well as Dickens unforgettable Cratchits.  You'll see reflections of  Victorian feasts in this class menu.  We'll start with a cup of fresh hot Wassail.  Oyster Stew and Herbed Yorkshire Pudding will be the first course.  Beef Wellington with Green Peppercorn Sauce and Horseradish Sauce will be served with a Carrot Puree & Brussel Sprouts roasted in Chestnut Oil. For dessert, a Roasted Pear and Amaretto Trifle and an authentic, from-scratch, Mincemeat Pie.

Thursday, December 6th ● 6:30 - 9:00 pm ● "Beyond the Basics of Cake Decorating" ● Hands On Class ● Christina Faust - Cooking at the Cottage ● $50.00   Christina's background is in fine art where, for many years, she has drawn from her academic training in painting and sculpture and translated it to edible creations, not unlike many of the decorators on the show, Ace of Cake. Decorating a basic round cake with various techniques, used by professionals, will include covering a cake with rolled fondant, making Holiday decorations using royal icing, and embellishing it with flower paste and gum paste as well as learning coloring, painting, stenciling,  and more. With just a few basic tools and simple techniques, you can create beautiful handmade celebration cakes just like the pros. This is not a Wilton class...it's much, much more! *Ask for your supply list at signup. We offer these items for sale at the Cottage along with a 10% class discount on your purchase.

Saturday, December 8th ● 10:30 - 11:30 am ●  "Breakfast with Santa" ● $45.00  Santa is coming to town and wants to have breakfast with you and your family!  Bring your Christmas list and camera, tell Santa what you want for Christmas and have your picture taken!  Have breakfast at our "top your own homemade waffle bar" and enjoy sausage links, hash browns, milk, juice and hot coffee!  Each reservation includes two children and one adult or two adults and one child.  For each additional child or adult, please add $5.00 to the price of the breakfast.

Tuesday, December 11th ● 6:30 - 9:00 pm ● "A Tour of Italian Cuisine - "Umbria" ● Demonstration Class ● Sandra Gugliotta - Dining Elegance Caterers ● $50.00   This is the ninth of a series of monthly classes exploring the different regions of Italy!  This region of Italy in the most centrally located of the country.  It is also one of Italy's smallest regions.  Its capital is Norcia.  One of the most recognizable cities of the region is Perugia, known mostly for its chocolate. This region uses mostly pork as a staple meat and the black truffle as a favorite culinary delight which are available seasonally from Christmas through March.  Wild caught birds are also a delicacy in this region as they are often hunted & served both at home and in local restaurants.  Menu:  Salsa di Tartufi ~ truffle paste on toasts ● Involtini di Manzo ~ beef rolls stuffed with pork & chicken then seared & braised with wine ● Pomodori Ripieni al Forno ~ oven baked stuffed tomatoes ● Pizza Dolce ~ sweet pizza baked & topped with powdered sugar

Saturday, December 22nd ● 11:30 - 1:30 pm ● "Holiday Cake Decorating for Children" ● Hands On Class ● Christina Faust - Cooking at the Cottage ● $45.00 ● ages 10 years old and up ● Christina's background is in fine art where, for many years, she has drawn from her academic training in painting and sculpture and translated it to edible creations, not unlike many of the decorators on the show, Ace of Cake. Decorating a basic round cake will include covering a cake with rolled fondant & making Holiday decorations, using fondant, to decorate with. Each child will be able to create their own custom cake to wow their family & friends. Class is limited to 10 children so everyone will receive individual attention.
