It's a bit nostalgic, the notion of milk and cookies after school around the kitchen table while sharing the events of the day. While this image has changed in so many ways, the pleasant notion of "milk & cookies" lives on as a small indulgence to be enjoyed.  

IN THIS ISSUE, we're out to make a few fabulous cookies while improving our baking techniques. You'll find tips on how to measure ingredients correctly, and how to bake a better cookie. Recipes for three bakery-style cookies are included: White Chocolate-Cherry Oatmeal Cookies, Peanut-Butter-Milk Chocolate Bites, and Mocha Latte Cookies, all fabulous when freshly baked!

SOLD OUT!  Thursday, September 12th  ● 6:30 - 9:00 pm ● "Mastering the Art of Grilling" ● Demonstration Class (held outdoors) ● John Plymale - Porcini ● $55.00  We are taking it outside, so you can learn the techniques and secrets for grilling various mouth-watering meats, vegetables and fruits. We will talk about the ins and outs of cooking with charcoal versus gas, how to control the grill and its heat, cook meats to ensure desired doneness and how to know when it has been reached. After class, you will leave with a new found confidence when you light up the grill. NEW CLASS - Partial Hands On!  Monday, September 16th ● 6:30 - 9:00 pm ● "That Takes The Pie" ● Partial Hands On Class ● Barbara Turner - Sullivan University ● $55.00  Discover the rewards of creating a beautiful and delicious pie in this class. Everyone in class makes and rolls out a pie dough; please bring a pie plate with you to take your masterpiece home to fill and bake. Barbara will demonstrate a variety of different types of fillings and ways to top a pie. Menu:  Fall Apple Pie with a Lattice Crust ● Traditional Pumpkin Pie ● Cream Pie Three Ways ~ take the same custard and create three different flavor profiles ~ chocolate cream, banana cream and coconut cream topped with either meringue or whipped cream  (Don't forget to bring a pie plate with you to class!)

Tuesday, September 24th ● 6:30 - 9:00 pm ● "Cake Decorating ~ Mastering Roses and Writing Techniques" ● Hands On Class ● Jesica Jones - Certified Pastry Culinarian ● $55.00 Learn the techniques used to pipe roses, rosebuds, daisies and violets. You will also learn to do scroll work, scalloped edges, piped hearts and practice writing on your cake along with much more! Each student will be provided with an 8 inch cake to decorate and take home. Assembly, crumb coating and flat icing a cake will be reviewed. Tuesdays, October 15th through November 19th ● 6:30 - 9:00 pm ● "Basic Training 101" ● Hands On Class ● David Moeller - Sullivan University ● $475.00 for a Six Week course A six week series of HANDS ON training, guaranteed to have you cooking like a pro in no time! This class is designed for all students from the beginning cook to the cook who wants to fine-tune their skills and understand the "whys" of cooking! During this course, you will learn proper knife skills, stocks and basic sauce making, soups, salads, vinaigrettes, techniques such as sautéing, roasting, braising, slow roasting, pan frying, deep-frying and grilling. You will learn how to break down a whole chicken into individual pieces & how to truss meat correctly. You will learn about cooking beef, chicken, seafood, vegetables and starches. After this course, you will feel much more confident in the kitchen & motivated to try out new dishes and create your own recipes! Feel free to bring your cook's knife and an apron to class each week if you wish.
