Spring Asparagus - Every Which Way!


People mark time in different ways, the alignment of the stars, the phase of the moon, or what flowers are blooming in the garden. For us, it's what fresh vegetables and fruits are making their first seasonal appearance in the markets, and nothing says "spring" like asparagus!

 

IN THIS ISSUE, we celebrate asparagus as the beginning of the garden's cascade of fresh, local produce in the season ahead. We indulge in the bounty of asparagus by preparing it a variety of ways: steamed, grilled, roasted, breaded, stir-fried, pureed, wrapped, and garnished. You'll find plenty of ideas for your own improvisations with this springtime delicacy!

Get ready to haul in the shrimp with this class. Chef Alyn has pulled out all the stops to get everyone ready for summer shrimp season with these recipes. He'll start with Spicy Grilled Shrimp with Citrus Relish and Onion Strings; Panko, Parmesan and Pepper Crusted Shrimp Salad with Red Wine Gorgonzola Dressing; Shrimp & Tasso Ham Pasta in a Pepper Jack Cream Sauce; Sweet Grit Cake with Strawberries and a Blueberry Brandy and Honey Drizzle.

Preparing for company will be a snap with this menu. Executive Chef Spencer Thompson of Deveraux's will share his perfect Shrimp and Asparagus Risotto with Parmesan Cheese and Tomato Concassee along with Roasted Duck Breast with Sour Cherry Jus, Basmati Rice, Scallions, and Haircot Verts. You will use the entire menu or parts for many elegant evenings for two or twenty.

Teddi's back with an Asian inspiration theme for luncheons or simple suppers. She'll start with a Honey and Citrus Jasmine Tea Cooler, then she'll prepare Asian Spinach Salad with Sesame-Soy Dressing. Next this Sake Marinated Sesame Roasted Salmon with Orange-Ginger Relish along with Stir Fried Broccoli and Saffron Rice Pilaf with Currants and Almonds will round out the evening meal. For dessert there is the must-have Almond Fortune Cookies. Your "good fortune" is to be here for this class!

Put these recipes on the table this summer and enjoy your time outside instead of in the kitchen cooking. Plan ahead and enjoy Roasted Tomato Salad with Pan Fried Goat Cheese, Basil Infused Olive Oil and Orange Infused Vinaigrette; Herb Crusted Flank Steak with Tomatoes and Olives; Cumin Scented Cauliflower Puree; and for dessert when peaches are plentiful Quick & Elegant Peach Cobbler.

Chef Alyn has been dreaming of mixing fresh seafood with spring and summer vegetables for interesting variations. Mixing it up is what he likes with this Carrot "Risotto" with Seared Sea Scallops and Grand Marnier Glaze. Next he shows how simple it is to prepare Nut Crusted Grouper with Lemon & White Wine Braised Spinach and Maple Plank Roasted Salmon with Sweet Potato Puree and Mustard Maple and Herb Glaze For a finale these Basil and Proscuitto Wrapped Shrimp with Marinated Tomatoes & Red Onion will be the delight of the evening.

You can just feel the spring breezes with this easy but very tasteful menu. Start your evening with Melon & Serrano Ham Bruschetta. Follow that with Xato Salad (Green Salad with Anchovies and Romesco Sauce); then she will prepare Roasted Rabbit with Berries and end this lovely spring menu with Carrot Cake with Yogurt Cream.

Brady's back with great ideas for fresh and healthy grilling. He starts with Citrus marinated Grilled Chicken Breast with Basil Oil. Then he'll add Grilled Corn with Red Pepper Compound Butter and Grilled Asparagus with Raspberry Hollandaise. A fresh fruit arrangement including pineapple, cantaloupe, honeydew and grapes for dessert will top off the menu. While he's prepping and cooking he'll share his techniques for decorative presentations, sauce variations and prepping knife skills.

Then he sears Duck Breast with Cherry Port Demi Glace and serves that with Roasted Corn Polenta. For Memorial Day he shows you how to prepare the good ole' Classic American Buffalo Slider with Roasted Potato Pesto Salad. Your game will be which one will you fix first!
