- Have you ever wanted to increase the sophistication of your palette? This is the class for you. Learn how chefs and beverage experts pair beverages and food to make life long memories.
And just what would the fine fellows of the Trappe Door start the evening with? A Trappists, of course. To be more precise, Chimay Blue Ale. Along with the first taste, you will get to sample the key ingredients for the dish, Caramelized Onions, Pecans, and Fermented Black Garlic. Then learn how technique changes will bring out the unique flavors of each ingredient to make an incredibly paired Pecan - Golden Raisin Bisque. The star of the evening will be the main dish, Cherry Brined Pork Tenderloin En Croute with Berry Compote, Mushroom Cream and Zucchini Sear paired with Echt Krieken Bier. Taste the cherries, berries, and purple carrots and see how the Chef's notes, and expertise pull the sour, caramel, sweet, and oak flavors from the ale, into a blend that makes a simple pairing into sublime culinary memory.
