Pickling: More than Just Cukes  

Say the word, "pickle," and your mouth responds. The salty-sour taste of a pickle satisfies some intangible need while adding plenty of pizzazz to a plate. Pickles come in many forms - nearly any fruit or vegetable can be pickled into your new favorite.

 

IN THIS ISSUE, we feature the simplicity of making your own small batches of pickles and "putting them by" for the long winter ahead. Pickling is a great starting point for learning about preserving and canning. It's easier than you think! Not canning this year? We've included many ideas for enjoying pickles wherever you find them!

August Cooking ClassesAugust is full of last minute vacations, back to school activities and lots of reunions! We've added a few classes that will specifically help you during these busy times. Take a class and increase your culinary skills and add some fabulous recipes to your "recipe pantry."  

 

Thursday, Aug 11th- 6:30pm
BUBBA GUMP'S SHRIMP GALORE

The shrimp has been hauled in from Bubba Gump's shrimp fleet and Chef Alyn is pulling out all the stops to make the most of shrimp season with these recipes. The appetizer is a favorite of all of us, BBQ Rubbed Shrimp. Next he gets innovative with a Shrimp Tortellini Salad and follows that with Shrimp Rolls, a popular light and quick lunch or dinner favorite. Then he shows the award winning Shrimp & Grits with Apple Wood Smoked Bacon, Tasso Ham, and Roasted Red Pepper Red Eye Gravy. Dessert is a surprise but guess what? There won't be any shrimp in it!

EASY BACK TO SCHOOL MEALS!

What better way to start the school year with new easy weeknight dinners to get you out of the kitchen fast and on to homework. He will start with a Summer Tomato Vidalia Onion Marinated Pork Tenderloin with a Broccoli Salad. Next he'll demonstrate Marinated Butcher Shoppe's Cahaba Chops with a Parmesan Bread Crumb and Sauteed Green Beans and to end the evening our third entrée will be New York Butcher Shoppe's Stuffed Chicken, Breasts with Ham and Cheese (easy Chicken Cordon Bleu) with Oven Baked Rice.

ITALIAN SUMMER IN SOUTH CAROLINA

Spend the last dog days of summer having fun with these flavorful meals. They're great for informal weekend get-togethers or family meals too. He demos Roasted Tomato & Spinach Salad with Roasted Garlic & Raspberry Vinaigrette to start and then gets you out of the kitchen with Grilled Shrimp and Asparagus with Lemon and Parmesan. Next he will prepare Grilled Chicken Sunflower Pesto with Vegetable Pasta and finish for dessert Pan Roasted SC Peaches with Blueberry Coulis and Vanilla Ice cream. Easy to prep and quick to put together so you can enjoy the last of summer evenings.

THINKING LIKE A CHEF

Chef Brady can get you thinking like a restaurant chef and show you how thinking like a chef can help you budget and execute your own fantastic dinners quickly and economically. For this evening's class he will demonstrate how to do this with Pan Seared Beef Tips with a Brandy and Red Pepper Sauce for an appetizer. Next he will prepare a thick and creamy Lobster Bisque with Sherry and Crème Fraiche. For the entrée he'll serve Corvina Mediterranean a with Fresh Tomatoes, Olives, and Spinach in a Lemon Caper Butter. Dessert will be a homemade Zabaglione with Berries and Lady Fingers.
