Chef Meredith Hinely recently returned to her roots in Georgia after many years of cooking in Chicago. And within just a couple of classes, has become one of our more popular instructors. Those of you who have taken her classes understand why. This quarter she's back to help give your summer grilling a bit of Latino accent, with a little sampling of how Mexican cooks beat the summer heat, with some classic flavors, including:

  • Key Lime Margaritas 
  • Jalapeņos Rellenos: cilantro-cream-cheesefilled jalapeņo peppers wrapped in bacon and grilled 
  • Grilled Lamb with Classic Salsa Verde 
  • Tequila-Lime Marinated Flank Steak with Grilled Peppers and Onions and Mexican Rice 
  • Grilled Lemon-Lime Pound Cake, topped with Grilled Peaches and Cream

Now a chef at downtown's popular fine-dining destination, Alligator Soul, he shares the secrets for some of the restaurants popular new dishes, including:
