A renaissance is underway. After a few decades of frozen meals, fast-food drive-thru's, and eating out, people are returning to their kitchens to cook for themselves. There's a desire to know what goes in their food, to control food costs, and to eat well while staying trim.

 

IN THIS ISSUE, it's back to school, cooking school! We explain two cooking techniques that are perfect for the season ahead, braising and roasting. We share just what each technique offers, and apply the knowledge to some delicious recipes: braised short ribs, roasted vegetables, and the perfect roasted chicken.

July 31 - Tip of the Day: If you have a problem opening jars ... Try using latex dishwashing gloves. They give a on-slip grip that makes opening jars easy.

 

July 30 - Tip of the Day: For fresh-tasting lemon or lime juice year-round, freeze lemons and limes whole; thaw in microwave before squeezing.

Knife Skills and a Meal
 

There is nothing more valuable in the kitchen than a sharp knife, and the skills to properly use it.  In this class with Chef Robert Sanderson you will learn to cut, chop, slice, dice, and more just like a professional.  Also learn about sharpening, proper holding technique, storage, and more.  Whether you're a novice in the kitchen or an experienced home cook, everyone should take this class!

Spanish Tapas: The Small Plates of Spain
 

There's no question about it that one of life's simplest pleasures is good food and good friends. Spanish tapas are the perfect way to entertain or just add some new recipes to your repertoire. These small plates with big flavor are straight from Spain and absolutely delicious! Janis Boettinger and Geno Schuppe have authentic recipes that you will love to share with your friends and family for a fun night of casual dining, Spanish style!

Pot Pies
 

There is nothing better on a cool Fall evning than pulling something warm and bubbling from the oven for dinner.  Pot pies are one of the most comforting things possible!  These one dish meals are perfect for a weeknight dinner.  In this class with Resident Chef, JaDene Denniston, you will get amazing recipes for variations on this classic dish.  You'll be preparing these wonderful recipes all through the fall and winter season.

Perfect Under Pressure: Electric Pressure Cooking

Couldn't we all use a little more time in the day? With the electric pressure cooker in your kitchen you can cut down on your time spent in the kitchen so you can spend more time out of the kitchen. The fall harvest is a time for celebration.  What better way to celebrate the beginning of this new season than with elegant dishes that highlight the harvest?  In this class with chef, caterer, and cookbook author Marguerite Henderson, you will learn elegant dishes that are perfect for entertaining or a special family occasion.  Don't miss out on this fabulous class!

Hands On Whole Wheat Bread 

Come learn from our in-store instructor how to make delicious wheat bread using freshly ground wheat flour.  Instructor will also demonstrate how to make our cinnamon/currant variation.  Includes pan and one loaf of bread to take home.

Mastering French Macaroons 

There is nothing more delightful than a tiny French Pastry!  In this class with Pastry Chef, Molly Badger you will learn to perfect these tiny morsels.  Learn the secret to crispy meringue as well as creamy buttercream filling.  Learn how to correctly fold, pipe, bake, and cool these delicate treats.  Also, discover the many flavor combinations and ways to decorate with these tiny cookies that make them perfect for the holidays!

Grinding All Your Grains in the Nutrimill 

Come learn about the Nutrimill Wheat Grinder.  With Joy Ercanbrack you will learn all of the important information you need to mill all of your own flours at home as well as a basic understanding and introduction to the different types of whole grains.  The Nutrimill wil surely become your best friend in the kitchen!

Baklava & Phyllo Dough 101  

Phyllo dough is a secret weapon for even the most experienced cook in the kitchen.  These frozen sheets of dough have endless possibilities of fillings both sweet and savory and are a key competent of the famous Mediterranean dessert, baklava.  Janice Skousen has recipes that will be versatile and delicious, just in time for the holidays!  These flaky pastry sheets will be sure to be a show-stopper at any holiday gathering!
