All In With Chooclate

Love appears in our lives in many ways every day of the year, but it's fun to acknowledge and celebrate our affections with a day dedicated to those that are special in our lives. Some mark the occasion with cards or flowers, however, we think chocolate says it best!

IN THIS ISSUE, we're celebrating with chocolate. We start with a delicious recipe for Best Cocoa Brownies, proceed to individual Molten Chocolate-Raspberry Cakes, then on to a decadent, near-flourless cake known as the Queen of Sheba. Along the way, you'll develop your cooking skills with tips for working with chocolate, and a primer on how to beat egg whites. Let's get baking!

Our own version of the TV show, Chopped, we're pitting two of our favorite local chefs against each other and the clock. They will each be given two baskets full of unknown ingredients, one for an appetizer, the other a main course. You will be the judge, tasting, grading and awarding the title of Top Chef of The Cook's Shop! This should be a lot of fun for all involved. Class is limited to 16, sign up early to guarantee your seat! FYI - Dave Rudie, who was originally scheduled for this class, has taken a new job and will not be able to participate!

EURO BREADS Sold Out!

Wednesday, February 19, 2014 - 6:30 pm, $40
Matt Rapposelli - Chef, Hocking Hills Lodge
Chef Matt will be teaching everything you need to know to create Euro breads in your own kitchen! This class is as much about history and teaching as about cooking. You will learn to make a Hearth Bread, No-Knead Bread, and a Country Loaf. Matt is well known in Athens for the wonderful bread that came out of the bakery he owned and operated there years ago. Class is limited to 16.

Learn the basics of scone baking, flaky and southern style drop biscuits plus the fun and satisfaction of making your own bagels. Class is limited to 16.

John Rossi - Culinary Artist

Learn basic pasta making from the master himself, featuring various cuts and flavors of pasta made into a Pasta Primavera, plus the art of ravioli making with homemade ricotta filling served with a traditional marinara sauce. Class is limited to 16.

A class for any dessert lover, vegan or not! Use nutritious ingredients like whole-grain flours and coconut oil to add flavor to revamped favorites like chocolate chip cookies, brownies, and banana bread. Beginning and seasoned bakers alike will come away with useful knowledge and enthusiasm.

Learn basic smoking techniques that only require a couple of hours or less of time featuring Ancho Fennel Smoked Rack of Lamb, served with a side of Hickory Potatoes with Peppercorn Bacon and Roasted Garlic; Smoked Scallops with Saffron Pasta, and Smoked Pork Loin. Class is limited to 16.
