Grilling Chicken Different Ways
We hope you're already enjoying the grill this summer and find yourself rediscovering a few of your favorite recipes. But, are you ready to add new techniques and recipes to your grilling repertoire? We've found a few great chicken recipes ready for your grate - they're keepers!

IN THIS ISSUE, everyone's favorite bird, the chicken, hits the grill using a variety of techniques. We begin with vertically roasting a Beer-Can Chicken, then marinate some tasty Cilantro-Lime Chicken Thighs, and finish with a spatchcocked Chicken Under a Brick served with Grilled Avocados and Chiles. Summer just became even more amazing!

Dave will cover a variety of salsas, all to be incorporated in summer dishes. You'll learn to make a traditional salsa, a sweet salsa and a grilled salsa that is ideal on a hamburger. Class is limited to 16.

Erin Weber - Registered Dietitian, Culinary Nutritionist
This class will discuss your diagnosis, how it affects your diet, and how you can begin your new life with delicious meals.  Erin will educate you on portion control and discuss sugars  found in our everyday foods. A variety of snacks and meals will be demonstrated. Class is limited to 16.

Dagmar will talk about fish and how to buy it locally. Several cooking techniques will be shown. Pan-Seared Flounder with Dill Tartar Sauce, Salmon Cakes, Peruvian Steamed Fish, and Grilled Fish en Papillote. Class is limited to 16.

PIZZA ON THE GRILL

Wenesday, August 6, 2014 - 6:30 pm, $40

Those who know Jerry know him for his love of teaching French and English in the Warren school system. He is also an avid gardener and a food aficionado. Join us for what has always been a very entertaining hands-on class with fabulous pizza! We'll be baking in both charcoal and gas grills outside on the patio. Recipes will include: The Perfect Dough, fresh Garden Sauce, and a special olive oil mixture to brush on your crust. Mangier! Everyone will have the chance to roll their own dough and make their own pizza. Class is limited to 14.

Tuesday, August 12, 2014 - 6:30 pm, $65

Dagmar will share everything she knows about Maine Lobsters, from the basics of how to boil and shell, all the way to how to determine the sex of a lobster! Yes, females are sweeter than males! Dagmar will be making a classic Maine Lobster Stew, Lobster Gallete, traditional New England Lobster Roll, and a Lobster Cheesecake! Class is limited to 16.

Wrapping up the saltwater program will be Seafood 102 where Dagmar will start with a discussion about buying seafood locally. You will learn how to make Shrimp Scampi, classic Rhode Island Clam Cakes, Mussels steamed in wine, and Coconut Shrimp. Class is limited to 16.
