Julia Child famously commented, "A party without a cake is just a meeting." With her trademark air of confidence, she helped us define the role of cake as an essential part of celebrations. And, springtime brings many reasons to party - Mother's Day, graduations, bridal events, Father's Day - plenty of opportunity ahead for a party cake!

IN THIS ISSUE, we're here to help you with your party festivities with a few easy, yet dramatic, cake ideas. Starting with a springtime personality we have a Berry Vanilla Buttermilk Cake, followed by a decadent Double Espresso Chocolate Cake with Cappuccino Froth, and a unique idea for individual cakes, Little Lemon Layer Cakes. Along the way, you'll find plenty of tips for cake baking success. Get your pans ready and start the oven!

SUSHI

Saturday, May 31, 2014 - 2:00 pm, $50

Dave Rudie-son, Chef

This is our most popular class, hands down, so call quickly if you want a seat! You'll learn to cook perfect rice, select the proper ingredients (Dave will cover both seafood and vegetable sushi) and roll your own. If you're lucky, Dave will make up a few rolls of Hot Dog Sushi too! Each participant will take home their own bamboo sushi mat and rice paddle. Class is limited to 14.

Erin Weber - Registered Dietitian, Culinary Nutritionist
Erin will discuss how to live and cook with Celiac disease. Your diagnosis will be discussed, how it affects your diet, and how you can begin your new life with delicious meals. If Gluten-Free is a lifestyle choice, and not a medical issue, you're still welcome to attend this class! A variety of snacks and meals will be demonstrated. Class is limited to 16.

 

LET'S SALSA!

Saturday, June 21, 2014 - 2:00 pm, $40

Dave will cover a variety of salsas, all to be incorporated in summer dishes. You'll learn to make a traditional salsa, a sweet salsa and a grilled salsa that is ideal on a hamburger. Class is limited to 16.

This class will discuss your diagnosis, how it affects your diet, and how you can begin your new life with delicious meals.  Erin will educate you on portion control and discuss sugars  found in our everyday foods. A variety of snacks and meals will be demonstrated. Class is limited to 16. 
 

FISH 102

Wednesday, July 23, 2014 - 6:30 pm, $55

Dagmar Kupsche - The Cook's Shop

Dagmar will talk about fish and how to buy it locally. Several cooking techniques will be shown. Pan-Seared Flounder with Dill Tartar Sauce, Salmon Cakes, Peruvian Steamed Fish, and Grilled Fish en Papillote. Class is limited to 16.

Dagmar will share everything she knows about Maine Lobsters, from the basics of how to boil and shell, all the way to how to determine the sex of a lobster! Yes, females are sweeter than males! Dagmar will be making a classic Maine Lobster Stew, Lobster Gallete, traditional New England Lobster Roll, and a Lobster Cheesecake! Class is limited to 16.
