A Fabulous, Make-Ahead Spring Dinner
Spring is such a sweet relief to a long winter season! Soon we'll be digging in the garden, and getting together to celebrate the many special occasions that come each spring.

IN THIS ISSUE, we're planning ahead with a make-ahead menu worthy of any number of spring occasions. This menu, accomplished in steps ahead of time, allows for an enjoyable entertaining experience. Make the entire menu, or cherry-pick your favorites: Prime Rib Roast, Spring-Thyme Potatoes, Asparagus with Lemon-Pistachio Gremolata, Salt & Pepper Biscuits, French Green Bean Salad, and Zabaglione with Amaretti for dessert. The only thing left is to pick a date for your spring celebration!

Cham's is one of Parkersburg's best kept secrets, and we're pleased to finally get them involved in a class with us! Cham will make a Lebanese Salad, a Yackne Green Bean entrée, and a Namoura Semolina Cake for dessert. Class is limited to 16.

We are planning a fun day of coffee and more coffee with Lorraine Walker from Silver Bridge. We're offering two 45 minutes classes. Brewing the Perfect Cup will explain the ins and outs of coffee makers, espresso machines, French presses and pour-over techniques. Taking a vacation this summer? We'll teach you the brewing methods that travel with you the best! Understanding the Bean will be all about the types of beans and roasts. What makes a roast light, medium or bold? What's the difference between Columbian, Ethiopian Yirgacheffe and Tanzanian Peaberry? Sign up for both classes for only $25. Class size is limited to 20 and as a bonus, you'll each get a free Silver Bridge travel mug! If that isn't enough, we'll also be offering free samples of a variety of flavors of Silver Bridge all day long.  If we're a little jumpy that day I hope you'll understand why - come join the fun!

This is our most popular class, hands down, so call quickly if you want a seat! You'll learn to cook perfect rice, select the proper ingredients (Dave will cover both seafood and vegetable sushi) and roll your own. If you're lucky, Dave will make up a few rolls of Hot Dog Sushi too! Each

NEW - PASTA MAKING WITH JOHN ROSSI

This class is a new twist for both John and us - hands-on! John will demonstrate and educate you about the art of pasta noodle making. We will cook his pasta with a simple sauce to compliment his choice of flavor for the day. Everyone will make one pound of their own pasta to take home with them. Sign up early for this class!!!

Isaac Noland - Jackie O's, Athens
Isaac will be creating a salad with a beer vinaigrette, firing up the grill for a steak entrée with a mushroom/beer sauce and a grilled dessert that incorporates beer! Part of the class will be a discussion on beer pairings - how and why to choose the perfect beer for specific types of food.

CHINESE DUMPLINGS
Saturday, May 16, 2015 - 2:00pm, $40
Suli Wei Dickson
Suli assisted in our Chinese Hot Pot class last fall and impressed us so much with her knowledge and technique that we asked if she wouldn't mind conducting a class of her own. She'll demonstrate a number of different kinds of dumplings and the various ways to cook them. Easy and popular recipes such as Dumplings with Dill Pork, Sauerkraut Pork, Shrimp Leek, and Ground Turkey fillings will be covered in detail. Class is limited to 16.

FIVE INGREDIENT ENTREES
Tuesday, May 19, 2015 - 6:30pm, $45
Ellen Morgenthaler - Chef
Keep it simple with just five ingredients! Ellen will prepare chicken, pork, and beef entrees with a variety of easy pan sauces, all with just five ingredients. Class is limited to 16.

Our second "teamed" class with Witten Farms. Julie will be on hand to teach the techniques behind the proper growing and storage of fresh strawberries while Gayle will demonstrate a variety of strawberry recipes from cakes to jam! Class is limited to 16.

NON-TRADITIONAL SMOKING 
Sunday, June 14, 2015 - 2:00pm, $45
Jamie Heydinger - Chef, House of Wines 
Jamie will introduce us to a different type of smoking focusing on fish and vegetables. He will teach us about cold smoking, which is used to enhance flavor, as well as hot smoking. Learn to smoke a variety of foods as well as ingredients to add a gourmet touch to every day meals.
