KIDS CLASS!  Saturday, July 16th ● 11:30 - 1:30 pm ● "Kids Travel the World ~ Germany" ● Ages 7 - 12 years old ● Hands On Class ● Lelia Gentle - DreamCatcher Farm ● $50.00  Take a trip to Germany with us and learn some authentic dishes you will make again and again.  This is the sixth of seven Saturday classes for Kids.  You asked for it and we listened!  Now let's cook!  Menu: Zimtschnecken ~ Cinnamon Spirals also called Cinnamon Snails ● German Schnitzel ~ (thin pork cutlet, breaded and fried) with Jägerschnitzel Sauce (brown gravy) ●  Apple Strudel *** (parents will not be permitted to stay during class; our staff will be on hand to assist the chef and the students and provide extra supervision)  *** when registering, please give us the child's name and age in the comment section as well as if they need to work at a low or high table

KIDS CLASS!  Monday, July 18th ● 11:30 - 1:30 pm ● "Batter Up for Cupcakes ~ Kids Class" ● Ages 7 - 12 years old ● Hands On Class ● Jesica Jones - Love at First Bite ● $50.00  Cupcakes are so much fun to eat but even more fun to make and decorate.  Learn to make the batter, buttercream, and fresh berry jam filling from scratch, bake the cupcakes and decorate them to take home and enjoy. Perfect for brunch, an afternoon treat and the end to a lovely meal. KIDS CLASS!  Tuesday, July 19th ● 11:30 - 1:30 pm ● "Tacos vs. Burritos ~ Kids Class" ● Ages 7 - 12 years old ● Hands On Class ● Sandra Gugliotta - Dining Elegance Caterers ● $50.00  These dishes are so popular they've named a day of the week in honor of them - Taco Tuesday!  Let's learn make some of these favorites and more.  Menu: Tasty Ground Beef Filling for soft or hard shell tacos ● Salsa Verde ● Avocado Salad ● Pico de Gallo  to use as some of your toppings.  After the cooking is finished, step up to the taco bar to fill up your shells with all sorts of goodies to eat in class or bring home.  ** (parents will not be permitted to stay during class; our staff will be on hand to assist the chef and the students and provide extra supervision)  *** when registering, please give us the child's name and age in the comment section as well as if they need to work at a low or high table

Tuesdays, July 19th through August 23rd ● 6:30 - 9:00 pm ● "Basic Training 101" ● Hands On Class ● David Moeller - Sullivan University ● $525.00 for a Six Week course   A six week series of HANDS ON training, guaranteed to have you cooking like a pro in no time!  This class is designed for all students from the beginning cook to the cook who wants to fine-tune their skills and understand the "whys" of cooking!  During this course, you will learn proper knife skills, stocks and basic sauce making, soups, salads, vinaigrettes, techniques such as sautéing, roasting, braising, slow roasting, pan frying, deep-frying and grilling. You will learn how to break down a whole chicken into individual pieces & how to truss meat correctly. You will learn about cooking beef, chicken, seafood, vegetables and starches. After this course, you will feel much more confident in the kitchen & motivated to try out new dishes and create your own recipes!   Feel free to bring your cook's knife and an apron to class each week, if you wish.  Class is limited to 13 students, so sign up early to ensure your seat!

Wednesday, July 20th ● 6:30 - 9:00 pm ● "Introduction to Sushi" ● Hands On Class ● Lelia Gentle - DreamCatcher Farm ● $70.00  In this class you will learn how to make proper Sushi Rice, how to select sushi grade fish, as well as a discussion of necessary ingredients and equipment. We will review all the different kinds of sushi including Maki Sushi (Hosomaki, Futomaki), Nigiri Sushi, Gunkan Sushi, Temaki Sushi, Oshi Sushi, Chirashi Sushi and Inari Sushi. Class will include hands on making of an Inside roll and an Outside roll. In class, you will sample our version of a Cucumber Roll, Salmon Skin Roll, Grilled Asparagus Roll, Ebi Nigeri, Spicy Squid Roll, Philadelphia Roll and a Dragon Roll with Eel. For dessert, we will have Fresh Fruit Splashed with Midori

However, local Hawaiian cuisine was born from the melting pot of different Asian cultures and island necessity. Experience the REAL Hawaii, outside of the resort, and eat like the locals do. Saturday, July 23rd ● 11:30 - 2:00 pm ● "Best of Brad's Designer Breads" ● Demonstration Class ● Brad Dillon - Brad's Designer Breads ● $50.00  For those of you who don't really want to watch Brad bake cookies or make muffins for 2 ½ hours, this class is for you!  Brad will provide you with some blank canvass recipes for that moment when you absolutely, have to show up somewhere with a sweet or savory item that is both quick and lustworthy. This will let your creative side shine, and clean out the fridge or pantry.  Remember all those blueberries you bought at the Farmer's Market this summer?  Put them in a muffin, and use up that half bag of pecans that are looking for redemption in the back of the pantry.  Look at the extracts in your pantry. Pull out the orange, and think about what do you like with it?  How about a no-butter scone, with orange extract, coconut and almonds?  Everybody loves the big cinnamon rolls, but there are many other uses for that dough; so let's explore the endless possibilities. Make a cinnamon/pecan or asiago/garlic/rosemary biscuit faster than you can say Sister Schubert. Fondant icing is the trick. You will frost, fill and cover your cake in fondant and then decorate it in your own unique way!   Each student will be provided with a 6 inch double layer cake to decorate, take home, show off and ultimately eat. This is not a Wilton cake class...it's SO much more! Please arrive early, with your supplies, as we will begin promptly at 11:30 am. ***Ask for your supply list at sign up. We offer these items for sale at the Cottage along with a 10% class discount on your purchase and would be happy to put a kit together for you ahead of time; just let us know.*** (parents will not be permitted to stay during class; our staff will be on hand to assist the chef and the students and provide extra supervision)

Monday, July 25th ● 6:30 - 9:00 pm ● "The Odd Couple ~ Unusual Pairings" ● Demonstration Class ● Whitney Fontaine - Executive Private Chef - La Belle Du Sud ● $50.00  Chocolate + Peanuts. Lamb Chops + Mint Jelly. Who first decided these flavors paired well together, and why? Join Chef Whitney Fontaine to learn strategies to creating new flavor combinations that are great. Enjoy several of her personal favorites including Filet of Beef with Orange Nutmeg Cream Sauce and Soy Sauce Caramel over Vanilla Ice Cream. Whitney is a food scientist turned chef. After earning a degree in Food Science from Purdue University, Whitney worked for General Mills, spent 5 years at Louisville-based Paradise Tomato Kitchens, developing sauces for restaurant chains and lastly, was an application scientist at Brown-Forman. Whitney loved working with spirits, but found that she missed food terribly so she decided to earn a degree in Culinary Arts from Sullivan University. She now runs La Belle Du Sud, bringing highly customized restaurant experiences into people's homes.  Menu: pairings ~ White Balsamic Vinegar + Margaritas ● Soy Sauce + Caramel ● Cauliflower + Mint Pesto ● Orange + Nutmeg + Beef + Cream ● Sweet Potatoes + Feta + Tapenade ● and if there is time, Pickle Juice + Poultry

NEW CLASS!  Wednesday, July 27th ● 11:30 - 1:30 pm ● "Let's Decorate Cookies Together ~ Parent /Child Event" Ages 3 - 8 years old ● Hands On Class ● Sandra Hall - Sweet n Delish ● $65.00 for 1 child + 1 adult ● You've asked for it and we listened!  This is our first parent/child cookie decorating class and we are so excited!  In this class your child will decorate 4 cookies that you will take home and show off ~ with your assistance of course!  The children will learn how to ice a cookie using royal icing ~ outlining and flooding.  Next they will have the chance to decorate their creations with a variety of fun sprinkles, candies and confections.  Don't worry if the cookies aren't perfect - they are your child's artwork and beautiful to them.  Bring your child dressed to get a little messy but ready to have a whole lot of fun!  Menu: Elephant Cookie ● Lion Cookie ● Turtle Cookie ● Owl Cookie   **when registering please give the child's name and age in addition to the name of the parent accompanying them in the comment section.
