May Classes
Wednesdays, May 27th through July 1st ● 6:30 - 9:00 pm ● "Basic Training 101 ~ Technique Classes" ● Hands-On Class ● Lelia Gentle - DreamCatcher Farm ● $525.00. A six-week series of HANDS-ON training guaranteed to have you cooking like a pro in no time! This class is designed for all students, from the beginning cook to the cook who wants to fine-tune their skills and understand the "whys" of cooking! During this course, you will learn proper knife skills, stocks and basic sauce making, soups, techniques such as sautéing, roasting, braising, slow roasting, pan-frying, and deep-frying. You will learn how to break down a whole chicken into individual pieces and how to truss meat correctly. You will learn about cooking beef, chicken, seafood, vegetables, and starches. After this course, you will feel much more confident in the kitchen, and motivated to try out new dishes and create your own recipes! Feel free to bring your cook's knife if you wish. Class is limited in size, so sign up early to ensure your seat! Aprons are not provided.

Register OnlineThursday, May 28th ● 6:30 - 9:00 pm ● "Wrap It Up ~ Asian Style ~ Technique Class" ● Hands-On Class ● Lelia Gentle - DreamCatcher Farm ● $60.00.  We begin this class with the classic refreshing summer rolls ~ fresh vegetables wrapped in rice paper.  We then move to the heartier fare of Asian dumplings.  Dumplings is a broad term to describe pieces of dough that envelope some sort of meat or veggie filling.  Pot stickers, wontons, and gyoza are all dumplings found in Asian cuisine. The main differences lie in their country of origin, the type and thickness of the dough, and cooking method. Each one of these dumplings starts off as some filling wrapped into different shapes, and this hands-on class lets you make each of them. In the end, one thing is certain: pot stickers, wontons, gyoza, and pretty much all dumplings fall under the "delicious" category!  Menu:  Asian Summer Rolls with Two Dipping Sauces ● Perfect Pot Stickers ● Wonton Soup ● Brown Rice Buddha Bowl with Gyoza and Rainbow Vegetables.

Monday, June 8th ● 6:30 - 9:00 pm ● "Basics of Cake Decorating ~ Technique Class" ● Hands On Class ● Jesica Jones - Love at First Bite ● $60.00 Learn all of the basics of cake decorating. Some of the topics that will be covered in this class are assembly, filling, crumb coating and flat icing the cake, borders and piping techniques, coloring the frosting, making homemade buttercream frosting and much more. Jesica will also be demonstrating how to make Swiss Meringue buttercream.  Each student will be provided with an 8 inch cake to decorate and take home, show off and enjoy! This is not a Wilton cake class...it's SO much more!  Please arrive early, with your supplies, as we will begin promptly at 6:30 pm.  ***Ask for your supply list at signup. Unlock the secrets of making fresh egg pasta dough the way it is made in the kitchens of Italy. Under the watchful eye of Sandra, you will learn this art the same way she learned from the ladies in her Italian family. Tuesday, June 16th ● 6:30 - 9:00 pm ● "Fun on The Beach ~ Cookie Decorating Workshop" ● Hands-On Class ● Whitney Vogel - Belmar Baked ● $60.00.  This class is open to both adults and kids ages 12 and up.  Learn to decorate a variety of beach themed cookies, perfect for summertime, to give your family and friends or enjoy yourself. Learn the techniques and tricks to work with royal icing, how to achieve the proper consistency as well as coloring the icing; you will learn the correct way to fill and use a piping bag for decorating, as well as how to store leftover icing. Several different cookie decorating techniques, such as working with royal icing, outlining and flooding cookies will be covered in class as well as tips for baking the perfect cookie. Whitney will share her recipes for Traditional Sugar Cookies, Chocolate Cookies, and Royal Icing. KIDS CLASS! Thursday, June 18th ● 11:30 - 1:30 pm ● "Fourth of July Minis ~ Kids Class" ● Hands-On ● Sandra Gugliotta - Dining Elegance Caterers ● $50.00  Learn to make some fun foods to celebrate 4th of July!  These will be tasty mini treats everyone will enjoy.  Menu: Miniature Burgers ~ plain or with your choice of blue cheese, jalapeno, cheddar, feta and olive. Thursday, June 25th ● 6:30 - 9:00 pm ● "A Tour of Italy ~ Liguria" ● Demonstration Class ● Sandra Gugliotta - Dining Elegance Caterers ● $55.00. We will be revisiting different regions of Italy on our fifth tour, complete with new dishes. This small section of Italy is made up of very proud people who will use only what is available to them in their own little region.  Since the region cannot grow rice, they ignore it in their cuisine.  Since they do not have milk cows, they refrain from using butters and milks in their dishes, and use olive oil in their desserts.  Located on the sea, they do have a varied diet of fish.  Soups with various vegetables and greens are also very common in this region.  They will have rabbit in their diets, and lamb, veal, and tripe are also available to them. The most recognizable city in this region is the port of Genova. This is also the home of the beautiful coastal area known as the Italian Riviera.  Menu:  Farinata ~ Chick Pea Round Loaf ~ a flavorful bread of seasoned chickpea flour with extra virgin olive oil and thinly sliced onions, oven baked and served warm ● Torta di Bieta Alla Genovese ~ Stuffed Chard Tart ~ seasoned sautéed swiss chard with eggs, extra virgin olive oil, soft cheese, and parmigiana, layered between homemade layers of thin dough, then oven baked and topped with more grated cheese ● Tonno Alla Genovese ~ Tuna Steaks Genova Style ~ fresh tuna steaks seasoned and pan sautéed in a rich sauce of mushrooms, garlic, parsley, white wine and extra virgin olive oil, finished off in an oven and topped with the sauce, butter, and fresh lemon juice ● Castagnaccio ~ Ancient Chestnut Torte ~ a round, oven-baked chestnut batter, topped with raisins, pine nuts, and anise seed.  This is a very old recipe that used to be made on open hearths and wooden pyres.

Monday, June 29th ● 6:30 - 9:00 pm ● "Let's Get Saucy ~ Mother Sauces ~ Technique Class" ● Hands On Class ● Angelina LaRosa - Angelina's Culinary Consulting ● $60.00  In this class you will learn the basics of how to prepare the five mother sauces ~ Béchamel, Espagnole, Tomato, Hollandaise, and Veloute. You will become familiar with terms like Mise en place, Mirepoix, and the different types of Roux such as white, blonde, and brown. After you make each of these five sauces, hands on, we will transition them into dishes for you to use and carry over into your kitchens. Tuesday, June 30th ● 6:30 - 9:00 pm ● "Flawless French Macarons ~ Summer Edition" ● Hands-On Class ● Jesica Jones - Love at First Bite ● $60.00. Learn to perfect the skills needed to create stunning French almond macarons, perfectly domed and footed, as well as make two types of buttercream for the filling. You will practice the preparation of ingredients, a foolproof way of mixing the batter, and piping and baking these popular cookies. Each student will take home a small package of macarons to enjoy!  Please bring an apron with you to class.
