Tuesday, August 4th ● 6:30 - 9:00 pm ● "Fire Up the Grill with Latin Heat ~ Technique Class" ● Class will be held Outdoors ● Demonstration Class ● Lelia Gentle - DreamCatcher Farm ● $65.00.  Everyone loves the flavor of grilled meats, vegetables, and fruits so we are taking it outside so you can learn the techniques and secrets for grilling various mouth-watering favorites, Latin Style. We will talk about the ins and outs of cooking with charcoal versus gas, how to control the grill and its heat, cook meats to ensure desired doneness and how to know when this point has been reached. After class, you will leave with newfound confidence when you light up the grill. Thursday, August 6th ● 6:30 - 9:00 pm ● "A Tour of Italy ~ Sicilia" ● Demonstration Class ● Sandra Gugliotta - Dining Elegance Caterers ● $55.00. We will be revisiting different regions of Italy on our fifth tour, complete with new dishes. Sicilia is the big Island of Italy, where it is said the sun flavors everything from the wheat to the oranges. This is an area where fish is a staple of the cuisine, and swordfish and tuna are king in Sicily. Simple flavors filled with lemon, herbs, and vegetables reign. The climate is mild and sunny, and favors olive tree orchards, lemon trees, tomatoes, and artichokes from the ground, which is rich due to the volcanic presence of Mt. Etna. Menu: Arancine Di Riso, fried rice balls filled with mozzarella and anchovies ● Pasta al Grate, short cooked and baked Sicilian maccheroni-and-cheese with a homemade béchamel sauce, flavored with nutmeg then tossed with grated pecorino and topped with more of the same ● Caponata di Scampi e Molluschi, a hearty shell fish-and-shrimp stew with carrots, eggplant, herbs, garlic, capers, olives, and tomatoes, topped with a traditional unique savory and sweet nut-and-anchovy salsa, with orange and white wine vinegar, chocolate, sugar, anchovies, and bread crumbs ● Cazzilli ~ fried potato crochets seasoned with cooked ham, pecorino and parsley.

Monday, August 17th ● 6:30 - 9:00 pm ● "Basics of Cake Decorating ~ Derby Hat Style ~ Technique Class" ● Hands- On Class ● Jesica Jones - Love at First Bite ● $65.00. Be "Run for the Roses" ready!  Learn all of the basics of cake decorating. Some of the topics covered in this class are assembly, filling, crumb coating, and flat icing the cake, borders and piping techniques, coloring the frosting, making Swiss Meringue buttercream frosting, and more. Each student will be provided with an 8 inch cake to decorate and take home, show off, and enjoy! You will get to design your own Derby Hat Cake using colorful foils, flowers, and ribbons, as well as learn many tips and techniques to make your cake a show- stopping piece for your Derby party!  This is not a Wilton cake class--it's SO much more!  Please arrive early, with your supplies, as we will begin promptly at 6:30 pm.  ***Ask for your supply list at signup. Tuesday, August 18th ● 6:30 - 9:00 pm ● "Lost Pies of the South ~ Part One" ● Demonstration Class ● Lelia Gentle - DreamCatcher Farm ● $50.00.  This summer, we're inviting you on a road trip with us, an imaginary excursion through four of our Southern states, each one with a particular pie worthy of a place on your table. You won't need a map, a seat belt, or car keys for this journey-just an appetite to try something different. These pies, each with a distinct provenance, are full of stories and flavors that are unique to the states from which they came.  Menu: Over the Moon Pie ~ inspired by a sweet confection born in 1917 in Chattanooga, the famous Moon Pie ~ Tennessee. ● Atlantic Beach Pie ~ this was the only dessert at most seafood restaurants along the coast featuring a saltine crust, citrusy bite and topped with fresh whipped cream ~ ,North Carolina ● Peanut Pie with a Peanut Butter Crust and topped with Brown Sugar-Bourbon Whipped Cream ~ Georgia ● Grapefruit Chess Pie ~ in the low country, scattered here and there behind older homes around the city, trees bear kumquats, lemons, limes, oranges, and grapefruit-a secret spread-out orchard. Inspired by a neighbor's harvest, the Lee Brothers made a creamy, custardy version of this pie ~ South Carolina

Wednesdays, August 19th through September 23rd ● 6:30 - 9:00 pm ● "Basic Training 101 ~ Technique Classes" ● Hands-On Class ● Lelia Gentle - DreamCatcher Farm ● $525.00. A six-week series of HANDS-ON training guaranteed to have you cooking like a pro in no time! This class is designed for all students, from the beginning cook to the cook who wants to fine-tune their skills and understand the "whys" of cooking! During this course, you will learn proper knife skills, stocks and basic sauce making, soups, techniques such as sautéing, roasting, braising, slow roasting, pan-frying, and deep-frying. You will learn how to break down a whole chicken into individual pieces and how to truss meat correctly. You will learn about cooking beef, chicken, seafood, vegetables, and starches. After this course, you will feel much more confident in the kitchen, and motivated to try out new dishes and create your own recipes! Feel free to bring your cook's knife if you wish. ● Ages 7 - 12 years old ● Hands-On Class ● Jesica Jones - Love at First Bite ● $50.00. Cupcakes are so much fun to eat, but even more fun to make and decorate! Learn to make the batter and "bakery" buttercream from scratch, bake the cupcakes, and decorate them to take home and enjoy. Sure, we toss handfuls on dishes as a garnish - a familiar finishing flourish - but we've also learned to use them as major ingredients in stir-fries, salads, meatballs, soups, dressings, and more. In Vietnam, Georgia, Tel Aviv, Italy, Peru, Morocco, France, Mexico, and China we saw herbs used in ways that opened our eyes to a better way to cook and we want to share our experiences with you. This class dives deep into the culinary power of parsley, cilantro, mint, basil, tarragon, dill, and marjoram and will change the way you cook. Once again, we are taking it outside, so you can learn the techniques and secrets for grilling various types of fish and be successful in your efforts. We will talk about the ins and outs of cooking with charcoal versus gas, how to control the grill and its heat, cook fish so it will be moist and flaky and how to know when this stage has been reached. Fear no more, after class you will leave with a new-found confidence when you light up your grill. Menu: Grilled Mojo Fish Kebabs with a Bright and Zesty Sauce ~  Australis Barramundi , an ocean farmed, mild white fish is used for this dish ● Grilled Jerk Shrimp Kebabs ● Grilled Tuna Kebabs with an Asian Flair in a Ginger Chile Marinade ● Grilled Spiced Salmon Kebabs ● Grilled Fruit Kabobs with a Cinnamon Honey Glaze ~ watermelon, peach, and pineapple.

Tuesdays, September 8th through September 29th ● 6:30 - 9:00 pm ● "Intermediate Training ~ Technique Series" ● Hands-On Class ● Lelia Gentle - DreamCatcher Farm ● $350.00. A four-week series of HANDS-ON training, designed for those who have completed the Basic Training series and are looking for more. No worries: If you haven't taken the Basic Training series, but are comfortable with elementary cooking skills and want to fine tune your techniques or challenge yourself, this series would be perfect for you! During this course, you will concentrate on working with a variety of starches including rice, quinoa, risotto, and grits. Explore the diversity of the egg by making both savory and sweet applications. Learn different preparations for veggies, such as blanching, searing, stir-frying, grilling, and puree and soufflé. We will demystify how to use herbs and spices in all aspects of your cooking, discuss how to mix spices, teach you how to bloom spices, and explore the difference of using fresh versus dried herbs and spices in different applications. Feel free to bring your cook's knife and an apron to class each week.
